The Easiest Cranberry Thanksgiving Appetizer

I can hardly believe Thanksgiving is just over two weeks away! It's one of my favorite holidays. I love spending quality, cozy time with family while everyone seems to be more keenly aware of everything they have to be thankful for. 

Being vegetarian people often assume I wouldn't love this holiday for the simple fact that it's associated with turkey that I of course, don't eat. While it's true I don't eat the traditional main course, we have lots of tried and true vegetarian favorites in my family. 

Today I'm sharing the easiest and most delicious appetizer. It's perfect for the holidays, or really any winter entertaining you're doing. I love that it's just one bite, instead of two or three and it's so tasty. The brie and cranberry is such a nice compliment- not too sweet and it's filling, too. Best of all, it doesn't take too long to make.

You'll need:

1, 12oz bag of cranberries

1 cup of sugar

1 cup of water

30 fillo dough cups

1 block of your favorite brie cheese

1. Pre-heat your oven to 350 degrees. In a medium saucepan, bring 1 cup of water and 1 cup of sugar to a boil. Add in your washed cranberries, stirring occasionally as it cooks back to a boil.

2. I keep things simple and buy the fillo dough cups pre-made in the freezer section at the grocery store. You can of course make your own, but this saves so much time which I feel like I always need this time of year. Place those in your mini muffin tin while the cranberry sauce cooks.

3. You'll hear the cranberries start to pop their skins and the consistency will become more sauce/jelly like. This usually takes about ten minutes. Remove the mixture from the stove.

4. Fill your fill dough cups with one spoonful of cranberry sauce.

5. Cut cubes or pull pieces of brie that are approximately one half of an inch. You can of course do more or less depending on how cheesy you like them, but I find this to be a good ratio.

6. Bake your cups for 10-12 minutes until the cheese is melted.

7. Let cool and enjoy!

*To make 30 cups, you could just do half of the cranberry sauce (1/2 the bag of cranberries, 1/2 a cup of sugar and 1/2 a cup of water.) I make a full batch and then we have some cranberry sauce to enjoy on it's own. It's so simple and sooo good.*
