Valentine's Day Donuts!

With a two year bestie obsessed with pink, it's especially easy for me love Valentine's day this year. Donuts are my girl's favorite treat and I am so excited to make these pink cuties for her on February 14th and beyond! 

The recipe is super easy. I used a mini donut pan because, mini is darling and easier for her sweet little hands to hold, but a regular donut pan would work just fine.

Here is a list of everything you'll need to make the most delicious, simple donuts, ever.

Donuts:

1 box of cake mix. I picked vanilla

1/2 c. vegetable oil

1 c. water

3 eggs

Glaze:

3 c. granulated sugar 

3 tbsp vanilla soy milk

1 teaspoon pure vanilla extract 

Red food coloring

Toppings of your choice: I used pink pearl sprinkles and shredded coconut

To make these cuties:

Heat oven to 350. Mix water, vegetable oil, eggs and cake mix in a large bowl. Grease the donut pan and the pour mixture into it. I used one of these which made it really easy to get the batter in the teeny donut holes. Bake for 12 minutes until golden brown. Remove from pan and let cool.  (Continue filling and baking each tray until your batter is gone.)

In a separate bowl, combine the powdered sugar, milk and vanilla extract. Mix thoroughly. Add one drop of food coloring for a pretty pale pink and mix completely. I wanted a thicker glaze and loved the soft pink color. However, you can adjust the amount of granulated sugar by having less for a thinner glaze, and more for a thicker. Likewise, you can add more coloring if you want a darker hue.

Once the donuts have completely cooled, dip them into the bowl of glaze. Be sure they are nice and cool to ensure your glaze doesn't get warm and runny. Set aside the glazed donut and add your desired topping. Eat one, then repeat. I added toppings after dipping 3-4 donuts. Otherwise they hardened and the goodies didn't stay well. And embrace the imperfections- they are more charming that way!
