Sweet Potato Avocado Toast

Olivia's favorite lunch is avocado toast. I really love it too. So, we eat it a lot. I wanted to think of a way to change it up a bit, so I decided to make it using sweet potato instead of our go-to bread. (We love Whole Foods Organic Multi Seed!) This recipe is so easy and really elevates the classic avocado toast, while keeping everything simple.

You'll need:

2-3 Sweet Potatoes, depending on size

2 Avocados

Olive Oil

1 Lemon

Salt + Pepper

Chia Seeds

Pre-heat oven to 400. Slice the sweet potatoes into 1/2 inch to 1 inch rounds. Lay on a baking sheet and drizzle with olive oil. Bake for 20 minutes. Remove from the oven and sprinkle with salt.

We like our avocado with olive oil, lemon and salt and pepper. I usually combine those all in a bow and serve it mashed. If you like it a little prettier you can slice the avocados and then drizzle them with olive oil, lemon and s+ p. 

Next you simply add your avocado slices or a scoop your avocado mixture onto rounds. I love to add crushed red pepper flakes to mine. Olivia likes to add this everything seasoning. :) I top with chia seeds for a little nutritional bonus. Serve and enjoy!
