Easy Easter Carrots

My dear friend (and culinary genius!), Elaina laughs that I always seem to find a carrot dish on the menu for us to try when we are out to dinner. It's true. :)  I really do love them, and I started wondering why I rarely make them at home. With Easter on Sunday, I thought it was the perfect time to try a new and easy side dish that's perfect for the holiday, or any night around the dinner table. This is so delicious and pretty and so quick and effortless to make. I'm hooked!

All you need:

1 bag (16oz) Petite tri-color carrots 

1/4 c. olive oil

1 lemon

Salt + Pepper

Feta cheese

Pre-heat the oven to 400. Combine the olive oil and the juice of 1/2 of a fresh lemon. Then, coat the carrots in the mixture and pour them into a baking pan. Sprinkle with salt and pepper.

Let the carrots bake for 25 minutes. About half way through I stirred them to help ensure they cooked evenly. 

Remove the carrots from the oven and place them onto a serving dish. I love citrus, so then I added fresh lemon juice from the other half of the lemon and a little bit more salt and pepper. They are delish as is, but I especially love them covered in feta. Add to your liking :)
