Watermelon Yogurt Popsicles
In the warmer months, our fridge is full of watermelon. We absolutely love it. Olivia can eat more of it than anyone I know. Her obsession is strong as ever; she even has an adorable watermelon tank she loves to wear with a tutu these days :) I have been excited to come up with something using one of her all time favorites and I'm so happy with how these popsicles turned out. I love the idea of making them with greek yogurt to sneak in a little protein and I like that the slightly creamier consistency is a little unexpected for watermelon. They are a really healthy treat and are probably the easiest recipe I've shared yet!
To make ten popsicles, you will need:
4 cups of cubed watermelon
3 cups of greek yogurt (I used non fat, organic from Trader Joe's)
2/3 cups of honey
fresh lemon juice from 1/2 of a lemon
All you have to do is mix all of the ingredients together in your blender until smooth. Then pour the mixture into your popsicle molds and let them freeze overnight. We really love them and I hope you do too. xo!
