Petite Peach Pies

With our recent visit to the peach orchard, we have so many delicious peaches at home (about 10 pounds worth!) We have been enjoying them fresh and in our morning smoothies, but I knew I wanted to make a couple yummy treats, too.

I decided to start with a peach pie, and oh my goodness! It is SO good. I decided to make individual ones for something fun and I recommend you do too. When you taste this you aren't going to want to share! :) I'm sure she's biased, but my mom said it was the best peach pie she has had in her life! Of course you can make this as a regular sized pie, but I think the minis are cute, and they're a fun option for dinner parties or take home treats. Grab yourself some ripe peaches and make this delicious treat as soon as you can!

For the crust:

If you're feeling ambitious, Martha Stewart has a great classic pie crust recipe that is pretty easy to make. The four individual minis need a little more than 1 full pie, so I'd make 1.5x or even double. If you prefer store bought, I would say you would want a little more than the 2 pack, closer to 3 of them. I always feel like I need a little extra crust for the lattice work and dressing it up a bit.

Be sure to have 2 tablespoons of melted butter and about 2 tablespoons of sugar to top off the pies before baking.

For the filling you'll need:

6 cups of fresh peaches, sliced and peeled (This was 12 peaches for me)

3 generous tablespoons of flour

1 generous cup of granulated sugar

1 teaspoon of fresh lemon juice (approximately half of one small lemon)

1/2 teaspoon of cinnamon 

Directions:

Preheat oven to 425.

Once your pie crust is made (or brought to room temperature if store bought), place all of the ingredients for the filling in a large saucepan on low heat. Stir and let cook for about ten minutes. It will become a thicker consistency.

Place your pie crust into each of the pie tins. Cut thin strips of the rest of the dough to use for the lattice.

Remove the filling mixture from the stovetop and fill each pie with peaches. Arrange your strips into a lattice pattern or desired design. Brush the melted butter onto each of the pies and sprinkle with sugar. 

Bake the pies for 30 minutes. Let them cool slightly before enjoying on their own or a la mode. I hope you love it as much as I do! I think I may make more this weekend!  xo
